The Emperor's New Groove takes place in a setting that's half-contemporary, half-Inca Empire. My take on Kronk's signature dish is fairly modern to match the depiction in the film.

I flavored my puffs with garlic because it's used in modern Peruvian cuisine, but you can substitute any herb that goes well with spinach (like 1 tablespoon of dill). Kronk also mentions salt as an ingredient in Kronk's New Groove, and feta cheese is a good substitute for what was available in pre-Columbian Peru (they didn't have cows - they had llamas!).

If you have leftover spinach filling, you can make an easy baked pasta dish. Mix the filling with fresh pasta (and optional sour cream), add a layer of tomato sauce, and top with shredded cheese. Bake at 350 degrees F for about 30 minutes.

How to Make Spinach Puffs

— Ingredients —

spinach
1 package (10 oz.) spinach
(frozen)
onion
1 onion
(medium)
eggs
3 eggs
water
1 tablespoon water
feta cheese
1/2 cup feta cheese
(crumbled)
garlic
1 clove garlic
(pressed)
salt
1/4 teaspoon salt
pepper
1/4 teaspoon pepper
puff pastry
1 package puff pastry
(sheets)

— Instructions —

  1. Thaw the spinach and drain well. Squeeze out any excess liquid.
  2. Finely chop the onion (you should have about 1/2 cup).
  3. Preheat the oven to 400 degrees F (204 degrees C).
  4. Whisk 1 egg with the water. Then stir in all ingredients, except for puff pastry sheet.
  5. Unroll pastry sheet and cut into small squares (2-inch or 3-inch).
  6. Place about 1 tablespoon of the spinach mixture along the diagonal of each square.
  7. Fold the pastry over the filling, making a cone or triangle shape. Seal the edges.
  8. Place each pastry on a baking sheet lined with parchment paper.
  9. Bake until the pastries are golden brown (about 25 minutes).
  10. Allow to cool before eating.
