How to Make Sansa's Lemon Cakes

— Ingredients —

butter
butter
(to oil ramekins)
lemons
2-3 lemons
buttermilk
2/3 cup buttermilk
eggs
2 eggs
flour
3 tbsp + 1 tsp flour
white sugar
1/2 cup white sugar
(plus extra)
salt
1 tsp salt

— Instructions —

  1. Preheat the oven to 325 degrees F (163 degrees C).
  2. Butter and dust the inside of 6 four-oz. ramekins with extra sugar.
  3. Squeeze lemons until you have around 2.5 tablespoons of juice.
  4. Add lemon zest and juice to a medium bowl, along with buttermilk and egg yolks (be sure to reserve the whites).
  5. Whisk until smooth. Combine flour, sugar, and salt separately; then, gradually add to bowl while still mixing.
  6. Beat egg whites until soft peaks form. Carefully fold these into the bowl as well, without deflating the whites.
  7. Evenly divide the batter between the six ramekins, and place each in a pan with raised sides.
  8. Fill pan with water until the water line reaches halfway up the sides of the ramekins.
  9. Cover pan with aluminum foil and bake until the cakes are almost firm (about 25 minutes).
  10. Remove foil and bake until the cakes are golden, soft, and springy (about 15 minutes).
  11. Remove from pan and serve.
