This sauce was featured by Andrew Rea on his show Binging with Babish after the McDonald's recipe was released. There are alternative recipes with more common ingredients, including the popular version with plum sake by redditor Xeropoint.

How to Make Szechuan Sauce

— Ingredients —

water
1/2 cup water
white vinegar
1/2 cup white vinegar
white sugar
1/2 cup white sugar
soy sauce
1/2 cup soy sauce
apple cider vinegar
1 tablespoon apple cider vinegar
sesame oil
1/2 teaspoon sesame oil
garlic powder
1/4 teaspoon garlic powder
onion powder
1/4 teaspoon onion powder
ground ginger
1/4 teaspoon ground ginger
yeast extract (marmite)
1/4 teaspoon yeast extract (marmite)
corn syrup
1/2 tablespoon corn syrup
white pepper
1 dash white pepper
corn starch
2 tbsp corn starch
xantham gum
1 teaspoon xantham gum

— Instructions —

  1. Whisk all ingredients together, except for corn starch and xantham gum.
  2. Pour sauce into a saucepan.
  3. Remove 1/4 cup of the sauce, and combine with corn starch in a separate bowl. Mix back into the sauce.
  4. Remove another 1/4 cup of the sauce, and combine with xantham gum in a separate bowl (optional). Mix back into the same sauce.
  5. Whisk over medium heat until thickened.
  6. Strain, cover, and cool.

How to Make Chicken Nuggets

— Ingredients —

chicken breasts
4 chicken breasts
(boneless and skinless)
water
4 + 1/2 cups water
(cold)
sea salt
2 + 1/4 teaspoons sea salt
(fine)
flour
1/2 cup + 2 teaspoons flour
cornstarch
1/2 cup + 2 teaspoons cornstarch

1 1/2 teaspoons seasoned salt
dry milk powder
1 1/2 teaspoon dry milk powder
(nonfat)
sugar
1 + 1/4 teaspoon sugar
ground ginger
1 teaspoon ground ginger
ground mustard
1/4 teaspoon ground mustard
black pepper
1/4 teaspoon black pepper
(fine)
paprika
1/4 teaspoon paprika
cayenne
1 pinch cayenne
eggs
2 eggs
sesame oil
1/4 teaspoon sesame oil
soy sauce
1/4 teaspoon soy sauce
oil
oil
(for frying)

— Instructions —

  1. Pound chicken until about 1/4-inch thick.
  2. Cut chicken into nugget shapes.
  3. Soak chicken in 4 cups cold water and 2 tsp sea salt (about 2 hours). Blot dry.
  4. Mix 1/2 cup flour, 1/2 cup cornstarch, seasoned salt, dry milk powder, 1 tsp sugar, ground ginger and mustard, fine pepper, paprika, and cayenne together.
  5. In a separate bowl, whisk eggs, 1/2 cup water, 2 tsp cornstarch, 2 tsp flour, 1/4 tsp sea salt, sesame oil, soy sauce, and 1/4 tsp sugar together until smooth.
  6. Coat chicken in the batter mixture until the pieces are completely covered.
  7. Cover battered chicken pieces in the dry breading mixture.
  8. Preheat the oil and shortening mixture to 350 degrees F in a deep fryer (or a deep pan).
  9. Fry chicken until golden brown.
  10. Allow chicken to cool and drain on a paper towel before serving.
