How to Make Vegan Shepard's Pie

— Ingredients —

potatoes
4 potatoes
carrots
2 carrots
(medium)
celery
1 stick celery
(with leaves)
garlic
2 cloves garlic
onion
1 onion
vegan gravy mix
vegan gravy mix
fake meat stuff
fake meat stuff
olive oil
olive oil
(the finest!)
soy margarine
soy margarine
soy milk
soy milk
red wine
red wine
(optional)
tomatoes
3 tomatoes
(optional)
spinach
8 oz. spinach
(optional)
corn
1/2 cup corn
(optional)

— Instructions —

  1. Mince onion, carrot, celery, and garlic, or use a food processor.
  2. Boil the potatoes 15-20 minutes until tender, then mash. Set aside.
  3. Cook vegetables in olive oil until soft (about 15-20 minutes).
  4. Optional: add red wine.
  5. Add fake meat stuff, gravy, and soymilk. Stir until the sauce is smooth.
  6. Mash the potatoes with soymilk and soy margarine.
  7. Spread the vegetable mixture into a 9x13 casserole dish.
  8. Optional: add a layer of sliced tomatoes, cooked spinach, or corn.
  9. Add a layer of mashed potatoes.
  10. Optional: bake until crispy (about 20 minutes) at 400 degrees F (200 degrees C).
