How to Make Zucchini Bread

— Ingredients —

zucchini
2-4 zucchini zucchini
(2 cups worth)
eggs
3 eggs
vegetable oil
1 cup vegetable oil
vanilla
3 tsp vanilla
sugar
2 1/4 cups sugar
flour
3 cups flour
cinnamon
3 tsp cinnamon
baking powder
1 tsp baking powder
baking soda
1 tsp baking soda
salt
1 tsp salt

— Instructions —

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Wash and grate zucchinis, reserving the shredded pieces in a bowl.
  3. In a large bowl, mix eggs, oil, vanilla, and sugar.
  4. Gradually add dry ingredients, mixing until just combined, and finally stir in the shredded zucchini.
  5. Pour batter into a greased 8x4x3 loaf pan.
  6. Bake until a toothpick inserted into the middle of the loaf comes out clean (about 45 minutes), and let cool before serving.
