This walnut date loaf is so soft and flavorful. Delicious hot from the oven, and even better the next day. If you're not a fan of rum, you can substitute coffee or water for the Kahlúa.

How to Make Walnut Date Loaf

— Ingredients —

water
1/2 cup 118 ml water
Kahlúa
1/2 cup 118 ml Kahlúa
dates
2 1/4 cups 220 g dates
butter
1/4 cup 55 g butter
flour
1.5 cups 128 g flour
baking powder
1 tsp 4 g baking powder
baking soda
1 tsp 4.8 g baking soda
salt
1 tsp 5.9 g salt
walnuts
1 cup 125 g walnuts
(plus extra)
streusel
8 tbsp 120 g streusel

— Instructions —

  1. Bring water and Kahlúa to a boil in a small saucepan. Meanwhile, chop the dates.
  2. In a large bowl, combine chopped dates and melted butter.
  3. Pour the Kahlúa mixture over the dates, and let stand.
  4. Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  5. Combine flour, baking soda, baking powder, and salt in a separate bowl.
  6. Once cool, stir in brown sugar and egg. Fold in flour mixture until just blended.
  7. Stir in 1 cup of walnuts.
  8. Pour the mixture into a prepared 9x5 loaf pan. Sprinkle with streusel and additional chopped walnuts.
  9. Bake until golden brown and cooked through (about 50 minutes).
