How to Make Beignets

— Ingredients —

flour
2 3/4 cups 352 g flour
white sugar
1/3 cup 67 g white sugar
baking powder
3 teaspoons 12 g baking powder
baking soda
1/2 teaspoon 2.4 g baking soda
salt
1/2 teaspoon 2.75 g salt
nutmeg
1/2 teaspoon 1.1 g nutmeg
buttermilk
1 cup 237 ml buttermilk
water
1/3 cup 79 ml water
egg
1 1 egg
vanilla extract
1 teaspoon 5 ml vanilla extract
vegetable oil
vegetable oil
(for frying)
honey
honey
(garnish)
powdered sugar
powdered sugar
(garnish)

— Instructions —

  1. In a large bowl, combine dry ingredients.
  2. In another bowl, whisk buttermilk, water, egg, and vanilla.
  3. Add the dry ingredients, one cup at a time, until just combined.
  4. Place the dough on a floured surface and flatten to 1/2-inch thickness.
  5. Divide the flattened dough into 3-inch by 3-inch squares.
  6. In a frying pan, heat two inches of vegetable oil.
  7. Fry beignets until golden brown (about three minutes) on both sides.
  8. Place each beignet on a plate or wire rack lined with paper towels to cool.
  9. Drizzle honey on each beignet, and dust with confectioners' sugar.
