— Chef's Note —

This is a pie shell that you bake prior to using. It's a little more complex than a simple pie crust, but it's a little more aromatic.

sugar
1/3 cup 67 g sugar
butter
1/2 cup 115 g butter
(cold)
egg yolk
1 1 egg yolk
water
1 tbsp 15 ml water
(cold)
vanilla
1/4 tsp 1.2 ml vanilla

— Instructions —

  1. Combine flour, salt, and sugar.
  2. Cut in butter (.25 to .5 inch cubes), and mix until the consistency is like coarse sand.
  3. Mix in egg yolk.
  4. Add water and vanilla, and mix until the dough comes together.
  5. Form into a thick, flat cylinder. Wrap in plastic and refrigerate (about 30 minutes).
  6. Butter a pie tin, and roll out dough to fit in the pan. Crimp edges and prick the bottom all around with a fork.
  7. Preheat oven to 400 degrees F (204 degrees C).
  8. Gently tuck parchment paper or aluminum foil on top of the dough, and pour about a cup of dried beans or pie weights on top.
  9. Bake until golden brown (about 20 minutes).
  10. Remove pie weights and let cool, then brush the bottom with milk.
