Pinkie mentions Banana Brickle in the magical (yet terrifying) Too Many Pinkie Pies episode. I think she is secretly hinting that it's the most fun ice cream flavor, and coming up with my own recipe only confirmed my suspicions. Sweet banana ice cream sprinkled with sugary toffee just tastes fun.

How to Make Banana Brickle Ice Cream

— Ingredients —

bananas
4 4 bananas
(ripe)
brown sugar
2/3 cup 135 g brown sugar
salt
1/4 teaspoon 1.25 g salt
vanilla
1 teaspoon 5 ml vanilla
whole milk
1 cup 240 ml whole milk
heavy cream
1 cup 240 ml heavy cream
toffee
toffee
(recipe here)

— Instructions —

  1. Peel bananas and place fruit in a large bowl.
  2. Smash bananas with spoon (or use a mixer).
  3. Mix in brown sugar, then salt, vanilla, milk, and heavy cream.
  4. Chill if needed.
  5. Freeze and mix in toffee pieces (see homemade recipe below), following your ice cream maker’s instructions. If you don't have an ice cream maker, pour mixture into metal cake pans and place them in the freezer. Let sit until edges become firm, then remove and mix. Repeat until uniformly frozen. Toffee pieces should be added when almost frozen (just before the texture of soft-serve).
