Banana Brickle Ice Cream

"Ooh, did you get ice cream? What kinds did they have? Banana brickle?" - Pinkie Pie

Pinkie mentions Banana Brickle in the magical (yet terrifying) Too Many Pinkie Pies episode. I think she is secretly hinting that it's the most fun ice cream flavor, and coming up with my own recipe only confirmed my suspicions. Sweet banana ice cream sprinkled with sugary toffee just tastes fun.

How to Make Banana Brickle Ice Cream

— Ingredients —

4 bananas
brown sugar
2/3 cup brown sugar
1/4 teaspoon salt
1 teaspoon vanilla
whole milk
1 cup whole milk
heavy cream
1 cup heavy cream

— Instructions —

  1. Peel bananas and place fruit in a large bowl.
  2. Smash bananas with spoon (or use a mixer).
  3. Mix in brown sugar, then salt, vanilla, milk, and heavy cream.
  4. Chill if needed.
  5. Freeze and mix in toffee pieces (see homemade recipe below), following your ice cream maker’s instructions. If you don't have an ice cream maker, pour mixture into metal cake pans and place them in the freezer. Let sit until edges become firm, then remove and mix. Repeat until uniformly frozen. Toffee pieces should be added when almost frozen (just before the texture of soft-serve).

How to Make Toffee

— Ingredients —

light brown sugar
1/3 cup light brown sugar
unsalted butter
5 tablespoons unsalted butter

— Instructions —

  1. Line a baking sheet with waxed or parchment paper.
  2. Add butter and brown sugar to a small saucepan. Bring to a boil over medium-high heat. Continue to cook, stirring occasionally, until a candy thermometer reaches 300 degrees. If the mixture is getting too brown, turn down the heat so it doesn't burn.
  3. Scoop mixture onto the lined baking sheet and allow to cool.
  4. Once cooled, break up the toffee into pieces and set aside. You can double-wrap them in a plastic bag, or just place another paper on top before crumbling them with a mallet.
