This recipe is adapted from the one provided in The Redwall Cookbook to match the description provided by Friar Bibble in High Rhulain. Garlic is used in place of ransoms (broad-leaved garlic), and leeks in place of scallions. You can also substitute chili powder with any curry powder.

If you like mixing sweet and savory flavors as Garfo the otter does, you might try dipping nutbread spread with honey in the soup.

How to Make Shrimp'n'Hotroot Soup

— Ingredients —

butter
2 tbsp butter
garlic pod
1 garlic pod
onion
1 onion
leeks
2 leeks
vegetable stock
2 cups vegetable stock
potatoes
3 potatoes
chili powder
1 tsp chili powder
horseradish powder
1/2 tsp horseradish powder
watercress
1 lb. + 1/2 cup watercress
(about 2 bunches)
shrimp
8 oz. shrimp
(peeled, cooked)
milk
1 cup milk
salt
salt
(as desired)
pepper
pepper
(as desired)

— Instructions —

  1. Wash leeks and potatoes.
  2. Chop leeks, onion, and garlic; then peel and chop potatoes.
  3. Remove any tough or large stems from the watercress.
  4. Melt butter in a large pot over medium heat.
  5. Add garlic, onion, and leeks. Cook until soft but not brown (about 5 minutes).
  6. Add vegetable stock, potatoes, chili powder, salt, and pepper.
  7. Cover and simmer until potatoes are just about tender (about 15 minutes).
  8. Stir in 1 lb. of the watercress and simmer until leaves wilt (about 4 minutes).
  9. Add shrimp and milk, and stir until mixture is uniformly heated. Garnish with remaining watercress.
