Watercress is often paired with cream cheese and cucumber, but Brie, cream cheese, Camembert, or goat cheese all make fine choices for this tea sandwich. Leftover watercress (including stalks) can be used to make shrimp'n'hotroot soup.

How to Make Soft Cheese & Watercress Sandwich

— Ingredients —

watercress
1 bunch watercress
bread
2 slices bread
soft cheese
soft cheese
sea salt
sea salt
(optional)
pepper
pepper
(optional)

— Instructions —

  1. Slice cheese finely. (If cream cheese, spread on bread slices.)
  2. Wash and chop the watercress. The leaves and stems are both fine to eat, but snip off the stalks.
  3. Layer the sandwich as follows: bread, chopped watercress, fine slices of cheese, watercress, bread.
  4. Season with salt and pepper as desired.
  5. As a final touch, cut the sandwich into triangles. Enjoy with a bowl of pea and cabbage soup.
