Chef's Note

Making tea sandwiches always make me feel fancy. Watercress is often paired with cream cheese and cucumber, but Brie, cream cheese, Camembert, or goat cheese all make fine choices for this tea sandwich. I chose a herbed Brie, and found it to be very likeful.

Recipe

Making the Sandwich


You will need:

  • 1 bunch of watercress
  • 2 slices of bread
  • Soft cheese

Instructions:

  1. Slice cheese finely. (If cream cheese, spread on bread slices.)
  2. Wash and chop the watercress (leaves and stems are both fine to eat).
  3. Layer the sandwich as follows: bread, chopped watercress, fine slices of cheese, watercress, bread.
  4. As a final touch, cut the sandwich into triangles. Enjoy with a bowl of pea and cabbage soup.
